Shepherd's Pie

Ingredients

1lb lean ground beef (I used turkey. It was cheaper.)
1 medium onion, chopped
2 cloves garlic, chopped
1/4 cup flour
1/4 cup heavy cream (I used half 'n half.)
4 Tbs butter
2 cups frozen mixed veggies
1 can of cream of mushroom
Salt and pepper to taste
3 cups of mashed potatoes (I used a freezer friendly approach similar to this.)
1/2 cup cheddar cheese, shredded

In a skillet, brown the ground beef, onions, and garlic together. Once the meat is browned, add the flour, cream, and 4 Tbl butter. Stir to combine. Add the frozen vegetables, stir to incorporate.
Add the cream of mushroom soup. Stir to combine. Season with salt and pepper. Pour the beef and veggie mixture into a greased casserole dish. Cover the beef and veggies with a thick layer of mashed potatoes. Sprinkle with cheddar cheese. Cover with aluminum foil & freeze.
Thaw and bake at 350 degrees until hot and bubbly.

Note: The proportions in this recipe are best suited to a smaller high corning ware style casserole dish as opposed to a 9x13 standard baking dish. If you want to make a 9x13 you need to 1 1/2 the filling recipe and double the mashed potatoes.

  1. I just ate too much Shepherd's Pie :-)

    I hadn't tried this recipe before now. I thought the flavor was good but we were so hungry we didn't let the dish sit and cool a bit before serving so the mashed potatoes mixed immediately with the filling and made a sort of soupy mass...still yummy. SO after baking I'd let it set up for 15-20 minutes before serving.

    If I made this again I would also make the mashed potatoes a bit stiffer than I normally would. The potatoes soak up some of the liquid from the filling while it bakes.

    Looking forward hearing what changes you all might make!

  2. We also had our Shepherd's Pie tonight! Micah and I loved it!! Although we found that because we just took it out of the freezer this morning, it took quite a bit longer than we thought it would to cook, so in the future we would probably start thawing the night before:) We both thought it was really yummy! Ethan enjoyed it, Emily took a few bites, and Haley wouldn't touch it:( No suprises there though:) Thanks for this yummy freezer meal, Rachel!

  3. My kids loved it, my husband gives it an A+. I agree about the soupy-ness and needing some time to set up. I've been wracking my brain to think what I'd do about the soupiness besides waiting. Stiffer potatoes is a good idea, I also thought, maybe add some dry minced onions to soak up a bit of the moisture? They would probably taste delicious too. It does set up nicely after about 20 minutes, so maybe that's the real solution. Delicious recipe!

  4. We liked it as well. I did let it set up for about 20 minutes so it wasn't a soupy mess for us. Madeleine esp. loved the mashed potatoes.

  5. So glad to know that it does set up nicely after 20 minutes. Neither of my kids liked any part of it! So frustrating...because Schaun and I liked it a lot. Grrr.
