CrockPot Chicken Cacciatore

1lb Chicken Breast
1 jar of your favorite pasta sauce (classico, ragu, etc..)
1 can diced tomatoes
1 cup diced green peppers
1 cup diced mushrooms
1 cup diced onions
1 Tbsp minced garlic
2 Tbsp italian seasoning
1/4 to 1/2 cup cream cheese
salt and pepper to taste

Cook on high 4 hours or on low 6-8 hours. When complete, spoon over fettuccini noodles or noodles of your choice. If you would like to thicken the recipe, add a paste of cornstarch. Remember, you can really play with this recipe, You can add or subract the vegetable that you like. Adding parmesan cheese on top is also yummy.

I am typing this from memory ladies, so hopefully I havent forgotten any ingredients!!

  1. We had this one tonight and it was a SCORE!!! Why was it such a score, you ask? Because all of the other meals have been SUPER Yummy too:) But EVERYONE in our family ate it, that's right I said EVERYONE!! Even our little Haley, the pickiest of eaters and she said, wait for it.....she said"IT WAS YUMMY!!!" We have a remake for the Gray Household my friends!! Thanks so much Mary for doing this yummy freezer meal!! Looking forward to Feb 16 already ladies!!!

  2. Really very good. It's such a simple dish I'd not thought of doing as a freezer meal before and it was just what we needed! It was hearty and flavorful enough to stand up to whole wheat pasta and we had a big salad to go with it to get lots of veggies. Will definitely try this one again and do as you suggest and try a bunch of different veggies added in for more of a primavera cacciatore :-) Thank you Mary!

  3. We loved it as well. Madeleine couldn't get enough I cooked it while my Mom was in town and she loved it and kept eating out of the leftover tupperware bowl throughout the rest of the night. Thanks!
