Cilantro Lime Chicken with Corn and Black Beans

Ingredients:

1 1/2 pounds chicken breasts
Juice from 2 limes
1 bunch fresh cilantro, chopped
1 (16 oz) bag frozen corn
2 minced garlic cloves
1/2 red onion, chopped
1 can black beans, drained and rinsed
1 tsp cumin 
salt and pepper to taste


Directions
Place all ingredients in a resealable gallon-sized freezer bag. Mix together and zip bag closed.
Remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 8 hours (or HIGH for 4 hours). 
Serve with tortillas and toppings such as with sour cream, guacamole, salsa, and cheese.

  1. Sounds soo good T! Job really wants to do freezer meals as part of our 3 month food storage now. And tacos are ALWAYS up our alley =)

  2. We just ate the Yummy Cilantro Lime Chicken!! We removed quite a bit of the cilantro after dethawing, but before cooking in the crock pot and it tastes super delicious!! I ate it on tortillas and Micah had his over rice, both were DELICIOUS!! Definitely a keeper, the only thing we would do would be to only put in a tiny amount of cilantro or for me none at all and it would be PERFECT!! Thanks Tatiana:)

  3. Absolutely delicious! This is a great Wheeler meal. Super healthy and really flavorful. We're having it over rice and adding some avocado and extra cilantro for us :-)
